The color and flavor of honey differs depending on the nector source (the blossoms) visited by the honeybees. Honey color ranges form nearly colorless to dark amber and its flavor varies from delectably mild to distinctively bold, depending on where the honeybees worked.
Honey should be stored at room temperature away from direct sunlight. Do not refrigerate honey, it speeds crystallization. You can warm honey in the microwave or place the jar in warm water until the crystals dissolve. Never boil or scorch honey. Creamed or spun honey is finely crystallized honey. It is a spread that is very tasty on toast or biscuits.

- Add ¼ to ¾ teaspoon baking soda for each cup of honey used in baked goods.
- A cup of honey weighs 12 ounces. The same cup holds 8 ounces of water and 7 ounces of sugar.
- Reduce oven temperature by 25° to prevent over- browning when honey is added.
